Prawn Wonton Soup with Choy SumPosted by bee's knees (Singapore, Singapore) on 31 January 2007 in Miscellaneous and Portfolio. There're deep-fried wontons and there're wontons served in soup. I was in the mood for wonton soup so I made a one-pot meal of prawn wonton soup with a bunch of choy sum. Now, for the wontons, you'll need about 300g of fresh prawns, 1/2tbsp of finely sliced spring onions, 1tsp Shao Hsing wine, 1/2tsp light soy sauce, 1/2tsp oyster sauce, a pinch of sugar, a dash of sesame oil and fresh wonton wrappers. Peel and devein the prawns and dice the prawn meat. Combine prawn meat with the ingredients and chill for about an hour. Wrap the wontons and set aside. Grab a good bunch of Choy Sum, wash them and cut crossways. Bring some chicken stock to boil in a pot and add a tablespoon of light soy sauce, 1/2tsp of sugar and a dash of sesame oil. Bring down the flame and drop in the wontons and let it simmer for a couple of minutes. Add Choy Sum and simmer for another couple of minutes. Divide the wonton soup into two bowls and garnish with spring onions. And there we have a really delicous dinner for two.
